Vegetarian meals:
1. Spaghetti Genovese
Spaghetti Genovese is Quick and tasty and Ready in about 25 minutes!!!
All you need:
300g new potatoes, sliced
300g spaghetti
200g trimmed green beans cut in half
120g tube fresh pesto
Olive oil
Method:
1. Pour a kettle of boiling water into a very large pan until half full. Return to the boil, then add the potatoes and spaghetti, and a little salt. Cook for 10 minutes until the potatoes and pasta are almost tender. Tip in the green beans and cook for 5 minutes more.
2. Drain well, reserving 4 tbsp of the cooking liquid. Return the potatoes, pasta and beans to the pan, then stir in the fresh pesto and reserved cooking liquid. Season to taste, divide between four serving plates and drizzle with a little olive oil.
Top Tip: if you are in catered accommodation by a clean kettle boll the water put pastor in boiling water and leave to steam!!!!
2. Salmon Fishcakes
Ingredients
85g stale wholemeal bread
600g cooked wild Salmon
300g cooked Potatoes, mashed without milk and butter
handful of flat leaf Parsley, chopped
2 Eggs, beaten
3-4 tbsp vegetable oil or Olive oil
freshly ground salt and black pepper
Crème Fraîche Tartare, to serve
Method
1. Preheat the oven to 150°C/gas 2.
2. Cut the bread into small squares and place on a baking tray. Put
in the oven for 15 minutes until dried out. Tip into a food
processor and whiz to make crumbs.
3. Roughly mash the salmon with the potato, so it still has coarse
textured flakes and is not a homogenous purée. Mix in the parsley
and season with salt and freshly ground black pepper.
4. Shape the mixture into twelve flat cakes, about 2cm thick. Place
them on a large plate and cover with cling film. Leave in the
fridge for an hour or two to firm up, or longer if convenient.
5. Tip the beaten eggs onto a large flat plate, and spread the
dried breadcrumbs on another. Dip the fishcakes first in the egg,
turning to coat both sides, then in the breadcrumbs making sure the
sides are well crumbed too. Place the coated cakes on a third large
plate.
6. Heat a shallow film of oil in a large frying pan over medium
heat. Add the fishcakes, in batches if necessary, and fry for 4
minutes or so on each side until golden brown. Drain on paper
towel.
7. Serve with a dollop of Crème Fraîche Tartare.
Non Vegetarian
1. Fried rice:
Great for using up those left over’s!!!!
What you need:
2 tsp oil
1 egg beaten
2 rasher bacon, chopped
175g mushrooms, sliced
200g frozen peas
1 garlic crushed
2 tsp dark soy sauce
1tsp sugar
250g cooked basmati rice
Method
1. Heat the oil in a frying pan, then tip in the egg. Leave to set for 30 secs-1 min, swirling every now and again, then tip it out and finely slice. Add bacon and mushrooms to pan, then fry until golden, about 3 mins. Add peas, garlic, then cook for 1 min.
2. Mix the soy sauce and sugar together. Turn up the heat, add the cooked rice to the pan, heat through, then splash in the sweet soy sauce. Stir through the egg and serve straight away, with more soy sauce if you like.
2 chicken breast
one portion mozzarella
1 packet parma ham
loyd grossman sauce of your choice (preferably a garlic one)
1. Fry off the chicken until sealed, cut the chicken in half
slightly to make a little pouch,
cut the mozzarella into strips and stuff inside the chicken, wash
your hands!!
2. Now wrap the param ham around the chicken breasts and place in a large dish put in the oven until almost cooked,
4. Add the sauce over the top of the chicken and place in the oven until cooked, ensure the chicken is piping hot and cooked properly.
5. Serve with potatoes and veggies enjoy!!
This is the easiest and perhaps cheapest way of making meatball’s.
1. A pack of sausages;
2. spaghetti
1. Squeeze the meat out of the ends of each sausage into a bowl.
2. Rub your hands in a little oil to stop the meat stick, and roll into meatball shaped balls.
3. Fry on all sides until brown and cooked through. Nothing hard about that was there.
4. Chicken Kebabs
Marinade
2 tablespoons light soy sauce
1 tablespoon rice or wine vinegar
1 tablespoon oyster sauce
Kebabs
550g (1 1/4lb) chicken breast, skin removed and cubed
1 small red pepper, seeds removed and cut into pieces
1 green pepper, seeds removed and cut into pieces
1 onion, cut into wedges
25g (1oz) Flora Buttery spread
Rice
350g (12oz) long grain rice
Lemon juice
1. Combine all ingredients for the marinade in a large bowl, stir in the chicken, cover and marinate for at least 1 hour, stirring occasionally.
2. Thread the chicken pieces onto 8 skewers with alternate pieces
of red and green peppers and onion.
3. Melt 15g (1/2oz) Flora and use to brush the kebabs before
cooking under the grill for 12-15 minutes, turning frequently until
cooked through.
4. Meanwhile, cook the rice according to packet directions and
drain.
5. Heat the remaining Flora in a saucepan, add the red onion and
cook for 3-5 minutes, stirring occasionally, until soft but not
brown. Add the cooked and stir to heat through. add a little lemon
juice to taste
.
7. Serve the kebabs on a bed of rice.
QUICK AND EASY SNACKS!!!!
1. Eggy bread
2 slices of bread
eggs and a little milk
grated cheese
4 tomato slices (enough for one)
1.
Take a slice of bread and
dip it in the beaten egg and milk
2. Make sure its soaked in egg mixture and nice and absobed (put ur
grill on to preheat)
3. Now stick the slice into a very hot frying pan with a little oil
or butter to stop it sticking
4. Fry till lightly golden then flip and do the same with the other
side
5. Your grill should be nice and hot now add some grated cheese and
a couple of tomato slices and grill till the cheese has
melted
2. Omlette
3 eggs
a handful of grated cheese
stir fry oil
other ingredients on students personal choice i.e. ham
ect…
one egg
1/2 pint of milk
4oz flour
butter
+ any additional topping e.g. lemon/sugar
1. Put the egg, the flour and the milk into a mixing bowl. Whisk until creamy and smooth
2. Get a NON-STICK (very important) frying pan on a low heat. Melt a small amount of butter into this pan and move around until the bottom of the pan is covered.
3. Pour in enough mix to cover the bottom of the pan. Be sure to
mix in with the butter as this adds some flavour.
4. When the edges begin to go light brown, shake the pan side to
side until the pancake becomes loose. Flip the pancake and continue
to cook until both sides are cooked according to taste!
5. Top with a dash of lemon and some sugar!!
Pita Pizzas

other toppings of choice
1. Spread tomato puree over the top of the pita,
2. Then grate cheese on top and add any other extra toppings.
3. Place the pita on a plate and put in the microwave for 1 minute. If the cheese has not melted, put in for a further 10 seconds until it's melted. You will know when it is cooked enough.
You can also do the same but using a bagel instead if pita bread
